There are 10 wine growing regions in Beaujolais, but Beaujolais Nouveau can only come from the appellations of Beaujolais and Beaujolais Villages. These wines are meant to be drunk young when the fruits flavours are still bold.

Carbonic maceration is the process of making the Beaujolais vintages. It leaves the fresh fruit flavours without gaining the tannic qualities from the skins.
